SPRING ROLL RECIPE


This is the perfect recipe that’s packed with veggies, and vegan too! I love a fresh spring roll from a local restaurant, but it’s even better when you can make them from home! They’re packed with all the colors of the rainbow from so many different veggies and the sauces are just divine! Give this a try ASAP!


Sometimes it’s hard to come up with a recipe that has an array of veggies. Spring rolls might be the easiest way to eat more colors, more vegetable varieties, and they taste good too!

This recipe is actually vegan because I used tofu as the protein source. Some people shy away from vegan meals, but you can easily substitute for any other meat if you like! I love to marinate and coat my tofu and then stick it in the air fryer to make it crispy for added texture!

Ingredients needed for VEGAN SPRING ROLLS

  • Rice Paper - you can find this in the asian section at the grocery store! These are what you’ll use to turn your veggies into a little wrapped burrito.

  • Extra-firm Tofu - make sure to use the extra-firm variety. I find that it produces the most crispy texture when putting in the air fryer. Did you know that tofu is one of the cheapest protein sources you can buy? It’s strictly edamame bean!

  • Rice Noodles - you can also find these in the asian foods aisle. Make sure to buy the thin variety as I’ve found that the thick noodles are too much chewy texture for spring rolls.

  • Cucumber - these vegetables are mostly water and pack a great crunch!

  • Red Pepper - a great source of Vitamin C and they add a little sweetness.

  • Carrot - rich in Vitamin A and antioxidants, providing cancer-fighting properties and protecting your eyesight.

  • Purple Cabbage - added crunch, Vitamin A, Vitamin C, Vitamin K and more!

  • Avocado - this will add greater satiety with all of its healthy fats! These fats promote brain function and help with organ protection!

  • Cilantro - fresh herbs not only provide better flavor, but also added antioxidants. If you have a fresh herb garden, this is a great time to trim some fresh cilantro!

 

How do you prepare tofu?

My favorite way to prepare tofu for this recipe is actually found here! Make sure you don’t skip the step where you press the tofu. Getting out excess moisture is crucial for a truly crispy texture!

Do Spring rolls store in the fridge?

Unfortunately, you’ll want to make sure you eat these fresh. The tofu will get slightly soggy, the rice paper will harden and rip, and the avocado will turn brown when stored in the fridge too long. You’ll want to serve these immediately. If you do store them, you’ll want to make sure to eat within 24 hours!

Ingredients:

FOR THE SPRING ROLLS:

  • 9 sheets of rice paper

  • 1/4 package of rice noodles

  • 1/2 cucumber, thinly sliced

  • 1/2 red bell pepper, thinly sliced

  • 1 large carrot, thinly sliced

  • 3 cabbage leaves, thinly sliced

  • 1 package of extra-firm tofu

  • 1 avocado

  • Cilantro to taste

FOR THE SAUCE:

  • 1.5 tbs maple syrup

  • 1/2 c peanut butter (or other nut/seed butter)

  • 2 tbs soy sauce

  • 2 tbs rice vinegar

  • 1 tsp sesame oil

  • 1/2 c water

FOR THE SPICY MAYO:

  • 1/3 c vegan mayo

  • 2 tbs sriracha

  • 2 tsp coconut sugar

  • 1.5 tbs soy sauce

Directions:

  1. Prepare crispy tofu (see link above for recipe I used or make your own)

  2. Finely chop all veggies and set aside.

  3. Combine all ingredients for sauce and mix well. Set aside.

  4. Combine all ingredients for spicy mayo and mix well. Set aside.

  5. Prepare rice noodles as directed. Set aside.

  6. Fill a pan with warm water. Soak rice paper one at a time in water for 10-15 seconds and remove. It will soften as it absorbs!

  7. Place rice paper on a flat, dry surface. Place all fillings in the center.

  8. Carefully roll by tucking in the ends and rolling burrito style. Be careful as rice paper is delicate!

  9. Repeat steps 6-8 until you have made all rolls.

  10. Serve immediately with sauce and spicy mayo.
